Easy Southwest Chicken Taquitos

These could be a great Wedding Shower snack!

I love Pinterest. I can spend hours a day on Pinterest. Recently, I found a group of recipes from a wonderful blogger, "The girl who ate everything". Thank you so much for your inspiration to make from scratch one of my favorite treats.

Southwest Chicken Taquitos
1 lb Chicken 
1 tub Southwest Philadelphia Cooking Cream
1/2 cup shredded Mild Cheddar
1/4 cup shredded Bacon Bits
approx, 24 small tortilla shells - flour or corn, your choice.


 1st-Cook off your chicken, I chose to cook it in my Crockpot, then let it cool and and chopped it up into pieces my food processor could handle.

2nd- In your food processor, combine all ingredients. Process until a roughly shredded mixture appears.


 3rd-Using a small cookie scoop or a table spoon, scoop filling into soft taco shells and roll tightly. Lay side by side on a cookie sheet with the open side down.



4th- Bake at 425 degrees for 15-20 min or until the edges begin to brown.


 

Some changes I think I will make next time...
Adding Black beans and corn. Adding More Cheese. Seasoning the Chicken with fajita seasoning prior to after shredding.
